I’m always trying to find interesting lunches to take to work and I made this by accident. I was attempting to make an eggless salad sandwich with tofu but when I took to a bite into, I was pleasantly surprised that it had a chewy texture and was really flavoursome. It was so nice that I had an urge to share it with you.
Chop up some firm tofu until it’s quite fine and sprinkle a generous helping of paprika and a bit of salt and pepper.
Throw into a pan with a little oil and fry on a medium heat until it turns dark in colour and firm to the touch. I found it took around 15-20 minutes.
Leave to cook and prepare the salad; I used cucumber, avocado and mixed salad leaves.
Take the tofu off the heat to cool before popping into a bowl. You can choose what to add here if you prefer eggless mayo or vegan salad cream but I used a big dollop of garlic humous.
Mix it all up and then spread it on the bread. Add the salad on top. It’s also nice with a meatless slice too.
